■Toast Drink We will prepare one complimentary glass of local Yamaguchi sake. (From July to September, chilled hire-zake is also available.) *We are also happy to substitute another drink upon request. This plan includes shirako of torafugu, also known as the “king of winter delicacies,” added to the chirinabe hot pot. Please enjoy its creamy, rich depth of flavor. Shunpanro, located in Shimonoseki, Yamaguchi Prefecture, became Japan’s first officially licensed restaurant to serve fugu cuisine in 1888, by authorization of Japan’s first Prime Minister, Hirobumi Ito. Since then, its traditional flavors and masterful techniques have been passed down through the generations and can be savored at our Tokyo restaurant. For our usuzukuri, the quality of each individual fugu is carefully assessed to bring out the exquisite flavor and texture, then artfully arranged in the form of a large chrysanthemum blossom on fine Arita and Old Imari porcelain. *A private room charge of 5,500 yen per room applies when using a private room.
