An omakase course that begins with seasonal small plates and unfolds into nigiri. Incorporating the philosophy of kaiseki cuisine, it is thoughtfully composed to value the rhythm and flow of flavors. Centered on the waters off Hokkaido, we carefully select seafood in the finest condition for each season and prepare it with meticulous attention to bring out the natural character of every ingredient. Each piece and each dish is crafted to pursue perfection, offering a composition that satisfies everyone from first-time guests to seasoned gourmets. This is our only course, created to deliver an experience that exceeds its price.
