Built upon the trust and craftsmanship established by the first generation, the second generation now carries on that spirit, weaving the techniques of authentic Edomae sushi together with the aesthetics of Japanese cuisine and a contemporary sensibility to offer a once-in-a-lifetime sushi experience of true indulgence. At our restaurant, with a fully reservation-only system and all guests beginning at the same time, each dish is prepared in harmony with the moment when its flavor shines at its peak. We carefully present each piece using select ingredients delivered from the sea, mountains, and fields of the day, with meticulous attention paid to temperature, aroma, and lingering finish. We also pursue a luxurious setting chosen by gourmets from Japan and abroad, embracing not only the beauty of the cuisine itself, but also the vessels, presentation, and the elegance of space, all thoughtfully arranged to engage the five senses. Established in 1967, this is the highest-tier omakase course offered by Sushi to Wa no Shoku Seikichi, available exclusively at the counter and by reservation only. Each morning, the second-generation owner personally visits the market to select the finest seasonal ingredients at their peak from the coastal waters off Fukuoka, across Kyushu, and throughout Japan, crafting the day’s menu accordingly. No two courses are ever the same, allowing guests to enjoy a once-in-a-season encounter with flavors unique to that particular day and time of year. This course is served with a simultaneous start for all guests, ensuring that every dish and each piece of sushi is presented at its most delicious temperature and in optimal condition. Please immerse yourself in the live atmosphere unique to the counter experience, from the chef’s refined handiwork unfolding before your eyes to the sound of the knife, the aroma of charcoal, and the very moment each piece is completed. The course begins with seasonal appetizers, sashimi, chawanmushi, and grilled and simmered dishes that reflect the four seasons, followed by an omakase sushi selection featuring seasonal fish primarily from the waters off Fukuoka and Kyushu, carefully prepared using Edomae techniques. Depending on the season, premium ingredients such as spiny lobster may also be incorporated. To conclude, Seikichi’s signature mackerel pressed sushi, a specialty passed down since the restaurant’s founding, is served. After savoring its rich flavor lightly seared to fragrant perfection, the course comes to a close with soup and a seasonal dessert. If you have any ingredients you dislike or are allergic to, please let us know in the comments section. Depending on the reservation status on the day, we may guide you to a different seat. For counter seat reservations, we kindly ask that each guest order an omakase course. Please note that we may have to decline reservations from guests whose allergies or dietary restrictions are too extensive for us to accommodate in the course menu. If you wish to take a taxi, it may be more reliable to arrange one yourself rather than having our restaurant do so.
