Built upon the trust and craftsmanship established by the first generation, the second generation now carries on that spirit, blending the techniques of authentic Edomae sushi with the aesthetic sensibilities of Japanese cuisine and a contemporary touch to offer a once-in-a-lifetime sushi experience of the highest refinement. Our restaurant operates on a fully reservation-only basis with a simultaneous start, preparing each dish at the precise moment when it is at its most exquisite. Carefully selected ingredients from the sea, mountains, and fields are served piece by piece, with meticulous attention paid to temperature, aroma, and lingering finish. We also pursue a luxurious space chosen by discerning gourmets from Japan and abroad, embracing not only the beauty of the cuisine itself, but also the tableware, presentation, and the elegance of empty space, all designed to engage the five senses. Founded in 1967, this is a fully reservation-only evening omakase course centered on nigiri, presented by Sushi to Wa no Shoku Seikichi. This course is available exclusively in table seating and private rooms. Whether for a family meal, dining with friends, business entertainment, or a special anniversary, guests can relax in a calm setting while savoring the tastes of the season. Each morning, the second-generation owner visits the market in person, selecting the finest seasonal seafood of the day from the coastal waters off Fukuoka, across Kyushu, and from throughout Japan, then carefully composing the menu accordingly. As the offerings change with the seasons and daily market availability, each visit offers a unique omakase experience. The course begins with a seasonal appetizer, followed by chawanmushi featuring the delicate richness of carefully prepared dashi, along with a seasonal dish highlighting the freshest ingredients of the day. After that, guests can enjoy approximately 10 pieces of nigiri at the heart of the course. The nigiri features seasonal fish sourced mainly from the waters off Fukuoka and other parts of Kyushu. Built on the foundations of Edomae technique, each piece is served at its most delicious moment, with close attention paid to the temperature and texture of the rice and its harmony with each topping. This course also includes nigiri topped with spiny lobster. Please enjoy this special piece, marked by its refined umami and natural sweetness, together with the flavors of the season. To finish, Seikichi’s signature mackerel pressed sushi, a specialty passed down since the restaurant’s founding, is served. Lightly seared to draw out its rich flavor, it is a beloved dish among many guests. The course concludes with soup and a seasonal dessert, leaving a pleasant and lingering finish.
