At our restaurant, we operate on a fully reservation-only basis with a simultaneous start, preparing each dish at the precise moment when its flavor shines at its peak. Carefully selected ingredients from the sea, mountains, and fields of the day are presented piece by piece, with meticulous attention paid to temperature, aroma, and lingering finish. Founded in 1967, this is a reservation-only lunch omakase course offered by Sushi to Wa no Shoku Seikichi. Each morning, the second-generation owner visits the market personally to select the finest seasonal ingredients at their peak from the waters off Fukuoka, across Kyushu, and throughout Japan, crafting the day’s menu accordingly. Enjoy a seamless progression of seasonal Japanese cuisine and Edomae sushi, with each dish prepared to capture the unique flavors of that very day and moment. The lunch omakase is served in two seatings, starting promptly at 11:30 and 13:00. To ensure that every guest receives each dish and piece of sushi at its ideal temperature and condition, the course begins simultaneously for all guests. With careful attention to the perfect timing and temperature of each piece, our artisans serve every dish with precision and care. The course begins with a seasonal appetizer, followed by chawanmushi that highlights the delicate umami of carefully prepared dashi, and continues with seasonal dishes showcasing the finest ingredients of the day. Guests will also enjoy a small rice bowl lavishly topped with sea urchin and salmon roe, a signature Seikichi specialty beloved by many. After that, an omakase sushi selection featuring seasonal fish sourced primarily from the waters off Fukuoka and various regions of Kyushu is served. The chefs meticulously adjust the temperature and texture of the rice to complement each topping, hand-forming each piece before your eyes to bring out the full character of every ingredient. To finish, Seikichi’s signature mackerel pressed sushi, a specialty passed down since the restaurant’s founding, is served. After savoring its fragrant lightly seared aroma and concentrated umami, the course concludes with soup and a seasonal dessert. While seated at the whitewood counter, guests can watch the chefs’ craftsmanship up close and experience the seasonal bounty of Fukuoka, the beauty of Japan’s four seasons, and the hospitality and techniques that have been passed down since 1967.
