From among these crabs, which vary greatly from one to another, we carefully import only premium specimens filled with rich roe and firm meat. Raised in the clear waters near Gaoyou Lake and Taihu Lake in Jiangsu Province, where there are no concerns about water pollution, these crabs offer a deep, extraordinary flavor.
