About Course Menu
This course allows you to fully enjoy seasonal dishes and richly aromatic soba. Orders are also accepted on the day. Our soba, crafted in the tradition of our longstanding heritage, is characterized by its smooth texture and rich aroma. We use the finest domestically produced buckwheat flour and prepare the noodles using the same foot-kneading method that has remained unchanged for more than 120 years since our founding. We are also particular about our dashi. We use two types of bonito flakes, including specially ordered thick-shaved honkarebushi. We take pride in our traditional, full-bodied broth, carefully simmered for nearly an hour. Yabukyu’s soba is Edo-style Soto-ni Soba, a traditional method that uses a higher proportion of buckwheat flour than the standard nihachi ratio, allowing you to enjoy an even richer soba flavor.
