The term "shabu-shabu" is said to have derived from the method of rinsing ingredients in hot water and quickly cooking them. This method, which involves simply dipping food in hot water, allows you to appreciate the natural flavors of the ingredients without any deception. Therefore, we take great care in the quality, management, and aging of the meat. "Aging" is a very important process that determines the quality of the meat. With techniques developed over many years, we offer meat that brings out the maximum deliciousness in terms of texture, color, marbling, and fat content. Our "Goma Dare" (sesame sauce) is painstakingly roasted and ground entirely by hand to ensure that the flavor and aroma of the sesame are preserved.
