Ingredients vary daily, but during this season, featuring matsutake mushrooms, Kesennuma shark fin, abalone, crab, and Japanese Black wagyu beef, among others, Chef Okada will prepare an omakase course of approximately 8 to 10 dishes.

Appetizer: Chilled fruit tomato with shark fin, topped with superior broth jelly
Steamed Dish: Silkie chicken medicinal soup and crisp myoga ginger and potato salad
Sake Accompaniment: Shanghai crab or marinated swimming crab in Shaoxing wine
Fried Dish: Spring roll with sea urchin, served with fried donko shiitake mushroom
Stir-Fried Dish: Abalone and Malabar spinach stir-fried with abalone liver sauce
Grilled Dish: Crispy pigeon or grilled eel
Main Course: Nourishing soft-shelled turtle hot pot, gently simmered with sake and water
Rice Dish: Soft-shelled turtle and yuzu rice porridge

We are pleased to present a course featuring two signature main dishes: braised bear paw, prepared from domestically sourced bear paw purchased directly from trusted, contracted veteran hunters, carefully pretreated using traditional Chinese culinary techniques and slowly simmered over time; and whole braised shark fin made with premium domestic shark fin from Kesennuma.
