Omakase Kaiseki Moon Course: Recommendation to Enjoy Seasonal Flavors, Total 9 Dishes

In spring, we prepare dishes using the best seasonal ingredients like cherry blossom sea bream and Kyoto bamboo shoots, in summer with natural sweetfish, natural eel, and pike conger, in autumn with domestic matsutake mushrooms and blackthroat seaperch, and in winter with blowfish and Matsuba crab. We are committed to offering simple preparations that highlight these meticulously selected ingredients, which are sourced every morning from the Toyosu Market. Our sashimi includes an assortment of the season's finest natural fish, while grilled dishes are prepared over binchotan charcoal. Repeat customers are offered a changed menu. Please also enjoy the seasonal tableware, which changes monthly.

This is a kaiseki course that allows you to savor seasonal flavors with two small young ayu from Lake Biwa grilled over binchotan charcoal and two to three crispy fried small ayu from Lake Biwa (depending on their size).

Course with Natural Pufferfish Tempura

We primarily procure wild tiger pufferfish from Oita and Ehime. Since there are individual differences in pufferfish, we always carefully select them at the market. The wild tiger pufferfish from the Bungo Channel is exceptionally delicious, with its sweetness and the flavor of its broth being extraordinary. Please enjoy the true taste of pufferfish.

We source live natural ayu from the Nagara River. *In case of weather changes, the source may be altered to the Ota River or Takatsu River. Please enjoy the ayu grilled over Binchotan charcoal with our homemade Tade vinegar from head to tail. 

It might be rare to have the opportunity to taste and compare different types of ayu. Do take this chance to enjoy them.

*The natural ayu is typically from the Nagara River, but it may be changed to the Ota River or Takatsu River depending on the weather. 

*In cases where natural ayu cannot be stocked due to typhoon effects, we will contact you by phone from the restaurant. In such instances, the cancellation policy will not apply.

We use premium Amakusa golden pike conger and prepare it fresh upon your arrival. Hence, there may be a slight wait, but please savor the inherent sweetness and umami of the pike conger.
For grilled dishes, please choose your preference. Options such as sweetfish, tilefish, and blackthroat seaperch vary depending on the day's catch.
※For September and October, please indicate if you wish to enjoy our limited-time matsutake mushrooms.
