The course uses ingredients that are particular about their origin, featuring oysters and fresh fish delivered directly from fishing ports, enjoyed through various cooking methods such as raw, grilled, and fried. Among these, the Carpetbag Steak is a legendary dish that gained explosive popularity in Australia about 50 years ago, featuring a steak with oysters embedded inside the meat. The combination of oysters and beef is an exquisite match.
