A course that includes six wine pairings matched with the seasonal course meal. It begins with a celebratory champagne, choosing wines that complement the meal, not limited to Italian wines. We use wines that are typically not available unless a bottle is opened. (All wines are served in half glasses.)

For the main course, we offer A5-ranked Wagyu beef and the rare Shorthorn cattle delivered direct from a livestock farmer in Iwate, as well as Guinea fowl from Ibaraki.
