"For those who want to experience the world of Bisyoku S for the first time." This course is prepared as an "introduction" to the kaiseki cuisine crafted by Chef Masaya Sasazuka. Having honed his skills at renowned establishments in Kyoto, Nagoya, and Kamakura, Sasazuka has pursued the essence of Japanese cuisine, listening to the voice of the ingredients, and creating each dish with attention to aroma and finesse. This condensed philosophy is presented as a "trial kaiseki." Delicately weaving in the early, peak, and lingering flavors of the season, it showcases the transition of seasons with the same flow as a luxury kaiseki, yet in a lighter manner. Even first-time guests can feel the essence and atmosphere of Bisyoku S.
