Wagyu Lean Steak Course Grilled in a Hearth Oven

We grill steaks in a wood oven using cuts that have a strong umami flavor and a moderate marbling of fat. Since it's Wagyu beef, even the lean parts have a suitable amount of fat. The meat texture has a moderate springiness, with some thin veins, but you can enjoy wood oven grilling at a reasonable price. This course is perfect for those seeking concentrated umami and a light taste.
