Fillet of beef from Hokkaido has a rich flavor, and when perfectly grilled over charcoal, it becomes a luxurious dish combining aroma and tenderness. For vegetables and other ingredients, we mainly use produce from contracted farmers in local Iwatsuki, as well as interesting vegetables and ingredients discovered through our own travel experiences.

Thanks to a supply route inherited from a steakhouse with a 40-year history, the restaurant receives the finest A5 grade black wagyu beef. Among these, we serve the fillet, the best cut of meat. Chateaubriand is the rarest part within that fillet, known as the "phantom meat," and is a super rare part that can only be obtained from about 2-3% of all wagyu beef.

No matter how thickly it's sliced, it remains tender, with a sensation that it dissolves in your mouth. As for the vegetables, we focus on completely pesticide-free vegetables procured from a contracted farm in Tokorozawa, Saitama Prefecture, along with interesting vegetables and ingredients we discovered during our travels.
